Spring Salad with Radishes

Fresh and light spring salad with radishes for some extra pleasant crunchiness - guaranteed to be the highlight of the day.
Spring Salad with Radishes


  • 10-12 cherry tomatoes
  • 1 long cucumber
  • ½ sweet bell pepper
  • 3 fresh radishes
  • 1 bunch of ruccola
  • 1 tablespoon of lemon juice
  • 2 tablespoons of extra virgin olive oil
  • ½ teaspoon of sea salt
  • ¼ teaspoon of freshly ground black pepper


Step 1

Peel and cut cucumber in small cubes. Halve the cherry tomatoes. Cut the radishes in circles and thinly slice the sweet bell peppers.

Step 2

Toss the ingredients into the serving bowl and add ruccola (or use any of your favourite greens - bean tendrils, pea sprouts, spinach). Sprinkle with some lemon juice and olive oil. Season with a bit of salt and pepper. Mix and serve.
